There's a Floating Taco Bar in the Caribbean, So Excuse Us While We Fly There and Never Come Back

The Caribbean's first-ever floating taco and cocktail bar, Lime Out, recently opened in St. John, and it's the whole reason the US Virgin Islands just landed the top spot on our bucket list. The new eatery that floats 200 feet off Hansen Bay Beach can only be reached by kayak, paddle board, or a power boat. There's even a drive-through-style service for boats passing by and a sea-level wooden bar with submerged bar stools for those looking to stay a while.

"The East end of St. John is amazing, pristine, and untouched, and we're trying to honor that by inviting people to enjoy all of its beauty and having really delicious tacos and cocktails while doing it," Chelsea Baranowski told POPSUGAR. Baranowski owns Lime Out and built the bar with her husband, Richard.

Lime Out's head chef, Amaro Rivera, only uses the freshest ingredients for the tacos, which he designed himself. The menu includes 11 specially crafted tacos, including fresh-catch ceviche, surf and turf, rum ribs, shrimp, green curry chicken, and more. Their goal is to source everything locally to ensure the best quality products, and according to Baranowski, there are already plans to expand the menu.

If tacos aren't really your thing, the floating bar's craft cocktails are sure to get your attention. All cocktails are made with freshly squeezed juice and embrace the tropical vibes. For example, "The Danger" cocktail is mixed with fresh watermelon juice, lime juice, Thai chili-infused tequila, and pineapple. "This concept has been my husband Richard's dream for over two-and-a-half years," she continued. "He's been drawing it in the sand and designing it for [a long time]. The Virgin Islands need more options for locals and visitors who are seeking a totally different dining experience, so this is our version of [that]."

Better yet, the bar is eco-friendly, using recyclable cups, no straws, and biodegradable taco containers. Since being environmentally conscious is a priority, the team also does a regular check under the boat to clean up anything that may have dropped.
